Where it all began...

JESSE VASQUEZ JR.​

"I love to see the expressions on peoples faces when they are eating a dish that I have prepared." 
 
"If you are going to work and not learning something every day, either about your profession or about yourself, well, its time to find something new. Thats why I love to cook. I'm always learning something new about myself and the profession that I love."

I grew up watching my grandfather cook in the family restaurant. I enjoyed hearing the clanging of pots and pans. The smell of each dish being prepared. The intense heat from the kitchen and the noises of a busy kitchen. This fueled my passion for cooking. I would constantly find new dishes to prepare. Some good, some bad and a few I thought were great. As I grew older, I put my passion to the back burner to answer a higher calling. I joined the Army at age 23. I would go on to spend the next 12 years in the military. I deployed twice to Iraq, where I was valorously decorated and had achieved more than I had expected. I decided to leave the military to pursue my life long passion. With a little nudge from my children, I enrolled into college to receive a degree in Culinary Arts.

Some goals that I would like to achieve in the next 2-3 years are:​

1. Improve my knowledge base in different cuisines.

2. Work at a great upscale restaurant with a great chef to learn from.

Some long term goals that I plan to achieve are:

1. Open my own restaurant or bistro

2. Write my own recipe book
